Baked eggplants smoked cheese and Prosciutto Italian style
Italian style baked eggplant with a smoked Provolone cheese. Similar to an eggplant Parmesan, a perfect meal with all those great flavours. Equally good for vegetarians, just leave out the prosciutto.

  2. Great recipe Joel, here in the states we do not have canned cherry tomatoes, but you can get some decent ones in the off season from california or florida. I love smoked mozzerela. A litt tip if you are interested, italian eggplant and california eggplant are larger than sicilian eggplant, but they have many more seeds which is where the bitterness comes from. If you want less seeds and bitterness in your eggplant, try and buy the ones grown in sicily. They are a little smaller, but there is a huge difference in taste. Have a good day my friend.
