celery soup (vegan & gluten-free) Something Vegan
2 Tbsp. olive oil
1 lbs. celery, diced
1/2 cup onion, diced
2 cloves garlic, minced
2 Tbsp. white rice flour
4 cups vegetable broth
2 Tbsp. fresh parsley, chopped
1/2 cup non-dairy milk
1/2 Tbsp. lemon juice
1 tsp. salt
1/4 tsp. ground black pepper

To a pot over medium heat, add oil, celery, onion, and garlic. Stir and let cook until the celery starts to soften. Add rice flour, and stir well. Add vegetable broth, and parsley. Stir in, and bring to a boil. Reduce the heat to low, cover, and let simmer about 10 minutes. Remove from the heat, and let it cool a few minutes, before transferring to a blender to blend until smooth (or you could use a stick blender, and leave it in the pot). Pour the blended soup back into the pot, and add non-dairy milk, lemon juice, salt, and pepper. Stir well, and heat over low heat until warm. Makes about 7 cups of soup.
