Chinese traditionally must have noodles on their lunar birthday and besides that it needs to go with at least 2 eggs! Different dialects use different type of noodles and since we’re Hokkien, we use rice vermicelli, know as Mian Xian in Chinese or Mee Sua in Hokkien. Our family has our own version of what goes with our noodles and we love it! Of course, we can also have it during non-birthdays and if your family doesn’t have this practice, maybe you can start with our recipe!

Ingredients:
4 fresh chicken thighs
ginger slices
spring onions – top for frying and tail for going with mee sua
chinese mushrooms – 15 to 18 pcs
chicken stock

Chicken marinade:
Dark soya sauce – 2tbsp
Oyster sauce – 2tbsp
sesame oil – 1tbsp
huadiao wine – 1-2 tbsp
light sauce – 2tbsp
pepper to taste
