Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

12 Fresh Scallops in Shells
1 Tbsp Chinese Cooking Wine
50g – 70g Vermicelli (Rice Noodles)
8 Cloves Garlic
1 Red Chilli Pepper
3 Spring Onions
2 Tbsp Light Soy Sauce
3 Tsp Sesame Oil
Salt to Taste

1. Soak the vermicelli in warm water for 15 – 20 minutes until soft, then drain.
2. Finely chop the garlic, the white part of the spring onions and thinly slice the chilli pepper.
3. Remove the scallop meat from the shells, wash under cold running water to remove any sand.
4. Place the meat in a bowl, add cooking wine and mix. Leave to marinade for 10 minutes.
5. Clean the shells under cold running water with a brush.
6. Heat 2 Tbsp of oil in a pan and sauté garlic until aromatic, add spring onion and stir-fry for a minute.
7. Remove pan from the heat. Add soy sauce, sesame oil and salt to your taste. Mix well to make the garlic oil.
8. Place 1 litre of water the steamer
9. Place the amount of vermicelli to fill each shell, place into the steamer, then place the meat on top of each shell.
10. Take 1 Tsp of the garlic oil and pour on top of the prepared scallops.
11. Bring the water to the boil and then continue to steam for 8 minutes.
12. Transfer onto a dish, garnish with spring onion and chilli, serve hot
