In celebration of #TacoTuesday and National Vegetarian week we whipped up some crispy cauliflower veggie tacos. These tacos may be vegan, but while they are full of veggies they’re also full of flavour. While the method might be a little more complicated than some of our other recipes, they are 100% worth the effort. With chunky guac and red chillies they are an excellent way to kick start your week.
Inspired by Chef Vintin from our Q&A who recommended cauliflower as a very, very versatile vegetable. After being boiled it can be mashed up like potatoes, or fluffed like rice. We went for a oven technique that leaves them crispy and spicy.
