For the recipe you’ll need:
410 gr self rising flour
10gr instant yeast
85gr melted vegan butter
50ml sunflower oil
1 tbsp chia seeds
Pinch of salt
Oil for frying
Add 2 tbsp of water to the 1 tbsp of chia seeds to make a chia egg. Set aside to thicken for 10 minutes.
After this has thickend mix your chia egg with the milk, oil, melted butter and sugar. Mix well and sift in the flour, instant yeast and salt.
Knead until a nice dough forms. Let the dough rise in a covered bowl for 2 hours.
Once risen, roll out your dough until about 1.5 cm thick and cut into donut shapes. If you don’t own a donut cutter like me just use one big circle (cookie) cutter and one smaller circle. Once you’ve cut your donuts let them rise again for about 1 hour.
When your donuts have risen completely it’s time to fry them. Fill up a deep pan halfway with oil and heat until around 180 degrees Celsius. I don’t own a thermometer myself. I test if the oil is hot enough by putting a small piece of bread in the oil. If bubbles form around the piece of bread you know the oil is hot enough.
Once the oil is hot enough add the donuts to the pan and fry until golden. This will take about 2-3 minutes per donut. Turn your donuts halfway.
When the donuts are done let them leak out on a paper towel.
Once cooled add some fun coloured glaze to your donuts or dip them in melted chocolate.
