Paneer Yakhni Pulao

For paneer marination
250 cubed paneer
2 tsp ginger paste
2 tsp garlic paste
½ cup chopped onions
1 tsp cumin seeds
1 tsp fennel seeds
3-4 green cardamom seeds
2 black cardamom seeds
½ tsp cinnamon powder
¼ cup curd
1 bay leaf
For pulao
2 tbsp ghee
½ cup fried onions
1 tbsp ginger garlic paste
2 tsp kashmiri chilli powder
2 cups soaked basmati rice
500 ml water
Salt to taste
For garnish
2 tsp chopped coriander
2 tsp fried onions

1. Marinate the paneer in a the given ingredients for 10 mins
2. Pan fry this mixture & keep aside for later
3. In a pan heat ghee, add the fried onions, ginger garlic paste & chilli powder.
4. Fry for 2-3 mins
5. Now add the soaked rice & paneer, add enough water, cover & cook till water evaporates & rice is cooked.
6. Serve hot & garnish with chopped coriander leaves & fried onions.
7. Gobble! Gobble! Gobble!

Chef Recommends: Yakhni Pulao is traditionally made with mutton, here we have tried to create a vegetarian option by using paneer, its a traditional pulao flavoured with a bunch of spices & fried onion, the fried onions is the key ingredient in this dish, to make fried onions, slice the onions really thin, toss them in a little bit of cornflour & fry till golden & crisp.
