Today I will be showing you how to make a simple one-pot Syrian mujadara, a typical Middle Eastern recipe consisting of bulgur and lentils. Bulgur has fewer calories than rice with twice the fiber and almost 4 times the folate, which plays a vital role in DNA synthesis! This meal is topped with crispy fried onions and served alongside a cool vegan cucumber mint yogurt.
