This is my late father’s recipe. I hope you love it too!
Leeks Seeni Sambol
2 large stalks of Leeks
4-5 oz cooking oil
2 sprigs curry leaves
3 tablespoons paprika (or chili powder for heat)
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ginger powder
1 1/2 teaspoons ground cardamom seeds
1″ piece cinnamon
5 whole cloves
Salt to taste

Slice off and discard the root end of leeks. Clean the leaks well.
Heat 1 oz oil on medium heat.
Fry curry leaves for few seconds
Add all the leaks and mix to coat with oil for 5 minutes
Add all the spices
Mix, cover and slow cook on lowest heat
Check every 5 to 7 minutes and mix
Add more oil a little at a time when pan in sticking or getting dry
Use up all the oil in 40 minutes
At 50 minutes add the sugar and lime juice. Mix well.
Adjust salt and sweetness to taste.
Cook for another 10 minutes
Turn off heat.
Let cool. Can be kept in clean, dry jar. Refrigerate leftovers.
