So we recently had the most amazing vegan mac and cheese while in Manchester and it inspired me to make the ultimate recipe. We used a lot of common ingredients but really went all out on them like roasting our garlic and onion rather than using the powders and adding some amazing oyster mushrooms!   1. Ingredients:

    6oz (180g) boiled potatoes
    4oz (100g) boiled carrots
    2 tbsp nutritional yeast
    3 cloves roasted garlic
    1 roasted onion
    1 charred red chili
    2 tbsp lemon juice
    1/4 cup (60ml) non-dairy milk of choice
    1/2 cup (120ml) sunflower oil
    1.5 tsp salt
    3 tbsp water to thin

    For Macaroni:
    16oz (500g) macaroni
    1 tbsp oil
    4oz (100g) oyster mushrooms (chopped)
    4 scallions
    2 tbsp liquid smoke (substitute Tamari if necessary)

    For topping:
    1/4 cup (50g) bread crumbs
    2 tbsp oil
    Fresh rosemary or thyme (optional)

  3. Goah, dude, that’s looking so good! I’m just a bit worried about the amount of oil. I’ll try it without and use a bit of soy single cream instead maybe.

  5. Can you please please please put the recipe in the description, I like watching the video but it is a real pain to have to go back and watch it multiple times if I want to make the recipe especially if you forget to tell us the quantity

  6. I can’t wait to try this. The recipe I use at the moment has butternut squash and cashews which is pretty cool, but interested to try this one – and to add the liquid smoke. Squash isn’t the quickest veg to prep, so it would certainly save me some time!
