Heat one tablespoon of olive oil in saucepan then add in one tablespoon of flour. Mix to a pste then gently stir in one cup of milk (almond, coconut, cashew or whichever you prefer).
Mix and simmer, adding in two teaspoons of dried active yeast, tumeric ( for a more yellow colour) paprika or cayenne pepper (for a more orange-red colour). Stir until desired consistency is reached. Too thin the sauce, add a little water.
In this video, coconut cream was used in place of a shortfall in milk. this added a nice creamy texture and flavour.
This sauce was used over cauliflower and leek with fried onions. The onions were fried and various herbs and spices were added. Personally I like to cook the cauliflower and leek without any additional seasoning so th y maintain their flavour in contrast with the onion and cheese sauce but again, experiment and add seasonings to suit.
