VEGAN ENCHILADAS || Cooking Video!
The link to the recipe I based these on doesn’t work anymore, I have tried on multiple devices.

The ingredients the website used:
1 bell pepper, small
1 1/2 cups black beans, cooked
1/2 cup cilantro or parsley
1/2 cup corn, kernels
1 garlic clove
1 tsp garlic powder
3 green onions
1 tbsp oregano
1 yellow onion, small
1 zucchini, small
1 tbsp tomato paste
2 cups vegetable broth
2 tbsp lemon juice
1/4 olives
1/4 tsp black pepper, freshly ground
4 tbsp chili powder
2 tbsp flour
1 tsp salt
1 salt & pepper
2 1/2 tbsp olive oil, extra virgin
1/3 cup cashews, raw
8 flour or corn tortillas
1/4 cup water

What I used:
1 medium red bell pepper
1/2 can black beans
1/2 can corn, kernels
1 garlic clove
2 green onions
1 medium yellow onion
1 tbsp lemon juice
Small can sliced olives
1/4 tsp black pepper, freshly ground
1 tsp salt
1 tbsp olive oil, extra virgin
1/3 cup cashews, raw
8 flour tortillas
1/4 cup water (+more as needed to blend sauce more smooth-ish)
One can enchilada sauce
1/2 cup nutritional yeast (in cashew sauce)

Bake, covered with tin foil, until the sauce starts to bubble on edges, if I remember correctly it was about 30-40 minutes at 350 degrees Fahrenheit. Serving: 2 enchiladas.

These were soooo yummy, I ate three for lunch! My mom (who isn’t vegan, might I add, had one as well and gave high remarks! She wasn’t a fan of the cheese sauce; she said it was too garlic-y. Use whatever vegan cheese recipe is your fav, I’m still experimenting to find my go to.
