It is a No Knead Bread recipe (use mixer if u please!). And it is whole wheat plus oats too. What else better than having your breakfast (or lunch or dinner or even snack) with this full of goodness roll?
3/4 cup of water
1/2 cup of milk
2 tbsp vegan butter
3 tsp of yeast
2 tbsp of any syrup sweetener
1 cup whole wheat flour
1 cup oat flour (or grind regular oats until it turns into flour texture)
1 1/2 cup all purpose flour
Heat water, milk and butter until the butter melts. Let cool a little bit until it is just lukewarm. Add in yeast and your choice of any syrup sweetener then let sit for 10 minutes.
On another bowl mix whole wheat flour, oat flour and all purpose flour together. Add in the dry ingredients gradually into the wet and mix until all combined. I do very light and few rollings with hand before shaping it for rest time.
Rest the bread for an hour in a warm place. Divide and shape the dough into 9 or 16 equal pieces (mine into 16 because I love mini size!). Transfer into baking pan and let it rest for another 40 minutes.
Brush melted butter and sprinkle some oats on top (optional).
Bake for 18-20 minutes on preheated oven (200C). Let cool then devour! Spread any jam or nut butter you like. I love mine with peanut butter!
