Electric Lunchbox | Southwest Bowl | Vegan Recipe | First Time Using
I’m so excited to be using my lunchbox for the first time! I’ve been wanting one ever since I saw EmmyMadeInJapan’s review of one! Unfortunately there are almost no vegan recipes using these lunchboxes so I’m stepping out of my comfort zone and creating my own! Hope you enjoy! 🙂

Southwest Bowl Recipe:
An assortment of bell peppers, diced (about 3 cups)
80 ml Rice (dry)
1 can black beans, rinsed and drained
1 can corn, rinsed and drained
Taco Seasoning (I used half a packet)
Optional toppings: pico de gallo, salsa, cheese, sour cream, diced green onions
1. Dice peppers/onions
2. Drain and rinse corn/beans and mix with diced onion and seasoning.
1. Add 80 mL of water and 80 mL of rice to the middle bowl. Diced peppers go in the bottom bowl, bean mixture goes in the top bowl.
2. Add 120 mL of water to the base of the lunchbox, cover, and allow to steam for 1-2 hours.
3. Mix together, add toppings and enjoy! 🙂
