Moroccan couscous

Here is a traditional Moroccan couscous recipe:

Ingredients:

  • 1 cup couscous
  • 1 3/4 cups water
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground black pepper
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 cup frozen green peas
    • 1 cup diced tomatoes
    • 1 cup chicken broth
    • 1/2 cup raisins
    • 1/2 cup chopped fresh cilantro
    • Instructions:
    • In a medium saucepan, bring the water to a boil. Add the couscous and salt, and stir to combine. Remove from heat, cover, and let sit for 5 minutes.
    • In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
    • Add the cumin, ginger, cinnamon, and black pepper, and cook for 1 minute.
    • Add the carrots, zucchini, green peas, and tomatoes, and cook for 5 minutes.
    • Add the chicken broth and raisins, and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
    • Fluff the couscous with a fork and add it to the saucepan with the vegetables. Stir to combine.
    • Sprinkle with fresh cilantro and serve hot. Enjoy!
