Here is a traditional Moroccan couscous recipe:
Ingredients:
- 1 cup couscous
- 1 3/4 cups water
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp ground black pepper
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 cup frozen green peas
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1/2 cup raisins
- 1/2 cup chopped fresh cilantro
- Instructions:
- In a medium saucepan, bring the water to a boil. Add the couscous and salt, and stir to combine. Remove from heat, cover, and let sit for 5 minutes.
- In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
- Add the cumin, ginger, cinnamon, and black pepper, and cook for 1 minute.
- Add the carrots, zucchini, green peas, and tomatoes, and cook for 5 minutes.
- Add the chicken broth and raisins, and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Fluff the couscous with a fork and add it to the saucepan with the vegetables. Stir to combine.
- Sprinkle with fresh cilantro and serve hot. Enjoy!
